Deeply coloured, vibrant youthful raspberry, cherry and blackcurrant aromas. The palate is richly concentrated, full and robust in style, primary but balanced. A lovely core of fruit and seamless acid line with the ability to age well. Pair with char grilled eye fillet and duck fat roasted Potatoes.
Fruit sourced from two of Mclaren Vales finest Sub regions Tatachilla and Seaview. Tatachilla providing darker fruits and intensity, Seaview contributing red fruits and aromatics lift. Carefully hand-harvested, destemmed and cold soaked for 5 days before being allowed to warm to start fermentation.
Naturally fermented in 3 tonne open topped fermenters and gently hand plunged twice daily until sugar dryness. Then pressed off to old large oak barrels for maturation. After 12 months oak maturation the wine was blended, and bottled. Minimal SO2 was used in the production of this wine.
