This comes from a young vineyard in Friuli’s San Martino al Tagliamento, a village that has only recently been granted Prosecco status. Now with just 10 g/L residual, we’ve seen Babo’s Prosecco go from strength to strength. Most Prosecco consumed in Australia clocks in at around 17 g/L, making this both drier and more intense than many other examples out there. Abiding by the DOC regulations, this has to be labelled as a non-vintage, though the wine actually comes from a single vintage (2019 in this case).

This is 100% Glera, made using the Charmat method (or ‘tank method’) traditional in the region. It has fresh, peachy-floral fragrance and a creamy mouthfeel centred around a core of pear skin, citrus and melon fruits, offset by substantial yeasty, creamy depths. As always, excellent value.

Fruit is sourced from a young vineyard on the outskirts of Pordenone in the province of Friuli.

Fruit was picked at 10.5 Baume and fermented in stainless steel vats to produce the base wine. Charmat method is then used for secondary fermentation, and the wine remaining on lees after to build further complexity.

Peachy fragrance with a delicious core of citrus and melon fruits and yeasty complexity. The finish is clean and crisp without being excessively dry. Enjoy for breakfast, lunch or dinner!

About Babo

Back in 2009, Justin Bubb had spent almost a decade in Italy leading the transformation of the winemaking at famed winery, Castello Di Gabbiano. He had been sent there to help improve the winemaking and also be a conduit for the Australian owners at the time (South Corp). Originally only planning to stay for a short period, Justin was instrumental in growing the winery. He also was able to spend time working vintage in some of the most famed wine regions of Italy including Piedmonte, Veneto and Sicilia.

His time in Europe had also helped him see there was an opportunity to bring great quality Italian wines back to Australia. Having decided to return to Australia with Anna his new wife, he sketched out very briefly wanted to do:

•He wanted to produce great value Italian wines, so more Australians could fall in love with Italian wines (like he had)

•He wanted to shake any stuffy or old-fashioned stereotypes of Italian wine by offering contemporary wines styles that suited the wine savvy palates of Australia.

•He wanted to continue working with the amazing next work of growers and maintain the deep connection he had with his adopted country.

Taking an Italian nickname for a tool that measures ‘baume’ in fruit,

BABO was born.
