Description

Terroir
La Vouivre has its origin from different single vineyards of the Domaine. These plots have different exposures (South East or West) and the soil is grey marl from Lya with different sedimentations. The vines are between 30 and 45 years old. A wine that really reflects the exceptionnal Jura terroir, more specifically Château-Chalon.

Vinification
Natural fermentation. 80% has a maturation for 12-15 months in used Burgundy oakbarrels (228L) of 3-5 years old. 20% in stainless steel. Final blending and extra maturation for 3 months before bottling. No filtration, no fining.

The majority of the region’s vineyards are found at altitudes between 820 and 1,310 ft (250-400 m) between the plains of the Bresse region and the Jura Mountains.
