Vintage: 2018 – a classic Margaret River vintage, characterised by a beautifully warm and dry ripening period, moderated by afternoon sea breezes and cool, clear nights. Fruit was picked in superb condition at optimal ripeness with full flavours and balanced acidity.

Varietals: 95% Semillon; 5% Chardonnay

Appearance: Pale gold with bright green tints.

Aroma: Rich, complex aromas of lemon rind, jasmine, honeysuckle, crème brulee, woodsmoke & grilled nuts.

Palate: Depth and complexity garnered from fermentation of beautifully ripe fruit in new French oak. Vivid, pristine fruits of preserved lemon, kiwi and mandarin meld into woodsmoke char, roasted hazelnuts and crème caramel richness. A ripe and rich salted lime acid line adds further complexity whilst focusing and refreshing the finish.

Winemaking: Fruit was machine picked in the cool of night and pressed directly to tank for settling prior to fermentation in 100% new oak. Following 8 months maturation on ferment lees the wine was blended in tank. The wine was heat and cold stabilised with minimal fining and filtered prior to bottling in December 2018.

Oak Detail: Fermentation and subsequent 2 months maturation in 100% new French oak barriques (Bordeaux cooperages) before being siphoned across to a combination of seasoned French oak barriques for a further 6 months maturation.

Cellaring: Semillon as a variety is well suited to ageing, which combined with the new oak component means this wine will continue to evolve over the next 10 years.

Food Pairing: Drink with porcini mushroom risotto topped with shaved truffle.

About Fermoy Estate is a premium winery nestled in the beautiful region of Wilyabrup, the ‘jewel in the crown’ of the famous wine making region of Margaret River, Western Australia. It was established in 1985 by John and Beryl Anderson.

Wilyabrup, with its rich, loamy, well-drained soils, perfect temperatures and quality old vines is a purveyor’s paradise. Little wonder it is considered the ‘golden triangle’ of Margaret River. The main varieties grown are Cabernet Sauvignon, Semillon, Sauvignon Blanc, Chardonnay, Merlot, and Shiraz.

The winery is located right next door to the vineyard, so the grapes can be processed without delay, ensuring their premium qualities are retained. The winery processes some 350 tonnes of grapes each year.

Fermoy is one of the original established vineyards of the Margaret River region, but continually seeks to incorporate new ideas and technology. This reflects Fermoy’s ongoing quest to bring you the very best wines, while ensuring that everything we do is environmentally sustainable.
