Varietals (%’s): 64% Semillon; 34% Sauvignon Blanc; 2% Chardonnay

Appearance: Brilliant, pale straw yellow with green tints.

Aroma: Fresh & vibrant aromatics of citrus, pear and guava overlay subtle herbal spice and lemon curd notes.

Palate: The palate has lovely texture, weight and balance – lovely fruit weight combines with texture and mouthfeel garnered from partial barrel maturation and time on lees. A bright lemon acid line provides refreshment, length and persistence.

Oak Detail: The Sauvignon Blanc portion of the blend was fermented and matured in a combination of new and seasoned French oak, while the Semillon was fermented cool in stainless steel tanks to retain freshness and aromatics. Maturation on ferment lees contributed to texture, mouthfeel and overall complexity.

Cellaring: Ready for immediate drinking and will continue to drink well over the next 2-3 years.

Food Pairing: A perfect accompaniment to tempura battered King George whiting fillets with a squeeze of fresh lemon.

About Fermoy Estate

Fermoy is recognised for producing premium quality, award-winning wines from their vineyards located in the Margaret River wine region.

Fermoy Estate was established in 1985 by John and Beryl Anderson. It was named in honour of one of John Anderson’s ancestors, a Scottish-born businessman who acquired part of Fermoy Estate, just north of Cork, Ireland.

Wilyabrup, with its rich, loamy, well-drained soils, perfect temperatures and quality old vines is a purveyor’s paradise. Little wonder it is considered the ‘golden triangle’ of Margaret River. The main varieties grown are Cabernet Sauvignon, Semillon, Sauvignon Blanc, Chardonnay, Merlot, and Shiraz.

The winery is located right next door to the vineyard, so the grapes can be processed without delay, ensuring their premium qualities are retained. The winery processes some 350 tonnes of grapes each year.

Fermoy is one of the original established vineyards of the Margaret River region, but continually seeks to incorporate new ideas and technology. This reflects Fermoy’s ongoing quest to bring you the very best wines, while ensuring that everything we do is environmentally sustainable.

Through careful fruit selection and the skill of our wine making team, Fermoy is able to craft distinctive table wines full of unique flavours and characters.
