A seductive bouquet of dark fruits, black olive and dark chocolate is followed by a palate of cherry, savoury and cedar characters, all well-supported by silky soft tannins.
Hand harvested in March 2015 in the cool of the morning. Ideal ripening conditions of warm days, cool nights and little rainfall. Fruit steadily ripened allowing flavours to mature and accumulate to a perfect level.
Crushed, de-stemmed and cold soaked for two days prior to inoculation with a Rhone strain yeast. Fermented in an open pot fermenter and matured in new (30%) and seasoned French hogsheads for 18 months.
