Hollick have been making Sparkling White wines since 1988. The proportion of Chardonnay to Pinot Noir varies from vintage to vintage depending on the characters present in the grapes in the vineyard. Traditionally, the grapes are picked very early in the season to obtain delicate fruit flavours and optimum levels of natural acidity.

The traditional varieties of Chardonnay and Pinot Noir combine seamlessly, with the Chardonnay providing finesse and richness while the Pinot Noir adds body and complexity. The wine was fermented in bottle and aged on lees for 18 months to gain further sparkling complexities. This wine exhibits an extremely fine and persistent bead which explodes in the mouth.

Appearance :- Light straw to gold in colour with a fine and persistent bead.
Aromas :- Delicate scents of apple, pear and roasted macadamia nuts
Flavours :- An elegant and finely balanced sparkling wine with subtle flavours of pear and hints of straw. It has a fresh and persistent finish.

Each wine bottled under the Hollick Estates label represents the history of the site where it was grown. Careful viticultural practises, overseen by Stuart Sharam, are married succinctly with minimalist winemaking techniques by Winemaker Trent Nankivell to ensure each bottle retains unique characters from the vineyard where it is sourced.
