Hollick is one of only two producers of Pinot Noir table wine in Coonawarra. Since its first vintage in 1986, Hollick has developed a style which has been widely accepted in Australia and overseas. This wine is made from Coonawarra estate-grown Pinot Noir. Ripe cherry and stewed plum notes are overlaid with spice and vanillin characters, imparted by ten months’ maturation in French oak hogsheads. We recommend cellaring for up to 5 years, to allow the typical gamey characters of developed Pinot Noir to evolve.

Established in 1983, Hollick is a boutique winery located on the famed terra rossa soils of Coonawarra, in the Limestone Coast Wine Zone of South Australia. Driven by quality and a hands-on approach, all Hollick Estates wines are crafted from premium estate-grown fruit.

“Pride of Place” refers to our pride and respect for the role played by the “place” in which our vineyards are grown, the natural characteristics imparted by the vineyard situation, and the influences which our management practices make to the final product. Our carefully selected vineyard sites in Coonawarra and Wrattonbully have clearly identifiable regional characteristics which we showcase in each and every bottle of Hollick Estates wine.

Each wine bottled under the Hollick Estates label represents the history of the site where it was grown. Careful viticultural practises, overseen by Stuart Sharam, are married succinctly with minimalist winemaking techniques by Winemaker Trent Nankivell to ensure each bottle retains unique characters from the vineyard where it is sourced.
