The mild growing season in Coonawarra provides the ideal climate for white varieties, particularly Sauvignon Blanc. The Sauvignon Blanc is harvested over several weeks enabling the winemaker and viticulturist to capture a range of flavours extending from green and herbaceous characters to the more complex and tropical flavours of ripe fruit. The grapes are picked at the coolest time of the day to protect the flavours, then carefully fermented to ensure the retention of the pristine characters of this variety.

Each wine bottled under the Hollick Estates label represents the history of the site where it was grown. Careful viticultural practises, overseen by Stuart Sharam, are married succinctly with minimalist winemaking techniques by Winemaker Trent Nankivell to ensure each bottle retains unique characters from the vineyard where it is sourced.
