Vinification and Maturing
The grapes and must were brought in and went through a long pneumatic pressing to get a qualitative juice with no risk of oxydation.

Then, it was left to settle in order to clean it up from the biggest lees. That step is quite essential to ensure pure aromas and a bright color. The alcoholic
fermentation used selected yeasts in stainless steel tanks under controlled temperatures (18 to 20°C) to preserve a maximum of fruit.

To get a wine in the purest J.Moreau & Fils style, it will go through the complete malolactic fermentation and age on its lees for 8 months. This will give that wine we love with an intense nose of fresh fruits and a creamy texture in the mouth.

Color: elegant pale gold.
Nose : intense and fruity, with notes of mandarin and pineapple on a soft background of fresh almonds.
Mouth : fresh and generous, very typical of Chablis, offering a very pleasant minerality and a long-lasting, saline finish.

Origin
Located in the north of Burgundy, in Yonne department, the appellation stretches over around 20 communes that cover the hillsides running alongsidethe pretty Serein Valley. The vineyard enjoys an exceptional geological situation.

The main bedrock comes from the Jurassic epoch, or more precisely the Kimmeridgean age (150 million years ago). Deposits of tiny oysters can still befound today in the rock, remains of a time where the sea was totally covering this territory.

This Vintage

The Covid crisis has certainly marked this year’s harvest, which nonetheless has been able to go ahead! Despite the year’s record temperatures and lack of rainfall, there is been no lack of quality, although yields are down, with an especially mixed picture with regard to reds. However, these have generally been very well-balanced. Overall, we have seen nice levels of acidity, promising good aging potential…

About J. Moreau & Fils

In 1814 Jean-Joseph Moreau, a young cooper, marries a local winemaker’s daughter and inherits the oldest wine House of Chablis. Driven by passion for the vine and traditional values, he runs the business incredibly well and becomes very quickly one of the most important producers of wine in Chablis.

He was a pioneer in the region and his success kept on rising. Over the years, J. Moreau & Fils established on the international market and has become a prestigious House, successful worldwide.

The House handles its wines carefully and with precaution, simplicity and efficiency. All of this gives the wines a unique expression that is illustrated by an intense citrus nose, with fresh hazelnuts, underscored by a subtle minerality with a characteristic smoky edge. In the mouth, they are fresh, dense and very aromatic, with notes of blossom, nuts and sometimes, for certain crus, a finish of sweet spices and confectioner’s custard.
