Taken from a single vineyard on the Barossa floor, Barossa. Grown on ancient Biscay soil with excellent fertility. The wine has an intense brick red colour with a bouquet of red currant and dark cherry fruit with mulberry notes.

The wine has been crafted to enhance the rich, dark cherry and cassis fruit, with 40% new French oak, resulting in plush and juicy flavours with an elegant, soft, velvety tannin finish. Extended aging in the bottle before release integrates the unique characters of this premium Cabernet over time.

The result is a complex wine that is also Vegan friendly.

French word meaning ‘greyhound’, Lévrier are one of the oldest breed of dog appearing in ancient art and literature throughout history. Originally bred as hunting dogs, these majestic animals are constant companions in my life and have been associated with royalty, warriors and noblemen for centuries.

Egyptian god of the dead, Anubis is represented as a man with a greyhound dog’s head. Depicted as a protector of graves, his role was to usher souls of the dead to safely into the afterlife. Tutankhamen and Cleopatra’s many greyhounds were entombed and sometimes mummified with their owners to protect them on their way into royalty afterlife.

About Levrier

My winemaking career began from a very early age. My father, James Irvine is known as the “Master Merlot Maker” and from the age of seven I followed him around the winery, undertaking the ritual tasting of ferments and wine blending. After leaving school, instead of following the natural path into winemaking, I studied to become a nurse. My career as an operating theatre nurse spanned almost two decades, until I had what I refer to as a “mid-life crisis” and decided to follow my passion to become a winemaker.

Whilst studying winemaking at university I was fortunate enough to work six vintages both in the Barossa Valley and California, USA.

In 2003 I started my own wine consulting business and in 2010 with my partner Peter and two young boys, established “Wine Wise”, a 500 tonne purpose built, small batch processing facility in the Barossa Valley. “Great wines are created by synergy and attention to detail both in the vineyard and in the winery” and I am passionate about the quality of the wines that I produce for my clients. By providing specialized small batch winemaking facilities to many smaller producers I am able to create unique wines from their vineyards
