The Clare Valley Watervale Riesling is quintessentially Watervale, with aromas of bath salts and Bickford’s lime. It has intense flavours of lemon zest and the natural acidity gives the wine a freshness and liveliness that is packed full of flavour.

The wine shows purity of the variety and region in which this grape excels. Perfect food match for Coffin Bay Oysters, or King George whiting. Enjoy while young and fresh or cellar for 5 years. The wine will change over time as the acidity develops into toasted, buttery aromas and flavours.

Description

Vines
The Watervale Riesling vines, were planted in the early 1970’s and is situated in the heart of the township of Watervale, in the Clare Valley. The soils are classic red loam over soft rock.

Vintage
The 2021 ripening season in the Clare Valley was very mild, with a cooler than average summer. There was little summer and late spring rainfall, but the mild temperatures allowed for a long even ripening period. The yields were of average size, with great balance across the bunches. The resulting Rieslings have lovely perfume, natural acidity and extremely delicate fruit flavours.

Winemaking
The Riesling was harvested in the early hours of the morning in late February 2021. The fruit was crushed, destemmed and pressed into stainless steel, and the juice allowed to settle. After 9 days of cold settling, the juice was racked with minimal lees pickup, to keep phenolics low. Only free run juice was use, no pressings.

The fermentation was slow and steady with temperatures of 15C maintained throughout. The wine was fermented completely dry with no residual sugar and no added acid. The wine was then stabilised, filtered and bottled in May 2021.
