Light yellow with hint of green colour. Fresh intense Chardonnay style showing some melon and peach fruit flavours balanced with some French spicy oak.

Medium bodied wine balanced with some creamy flavours with some use of oak and having a long crisp finish. Excellent partner to all types of seafood and white meats such as chicken. This wine has the flavour, structure and balance to be enjoyed now or offers added satisfaction from further cellaring.

During the cool of the night, the grapes were picked at 13.5 Bau me to produce the fruit flavours that are required to make this great wine. Once crushed, the juice was quickly pressed and chilled to cold temperatures to protect it from spoilage and to preserve the delicate fruit flavours. After 48 hours of cold settling, the juice was racked and fermented in a mixture of oak and stainless tanks.

Once dry, the wines were left on yeast lees for a further 8 months to help create some complex characters that make the wine fuller and more enjoyable to drink. Careful tasting and blending, by our winemaker, help produce this wine of style and great value for money.

For over 30 years John Quarisa has consistently been recognised and rewarded for his winemaking skill. John has received some of Australia’s top wine honours and in 2004 he was awarded the Jimmy Watson Trophy in Melbourne and Stodart Trophy in Brisbane, reaching the pinnacle of Australia’s wine show circuit.

“John Quarisa has had a distinguished career as a winemaker spanning over 20 years, working for some of Australia’s largest wineries, including McWilliam’s, Casella and Nugan Estate. He was also chiefly responsible in 2004 for winning the Jimmy Watson Trophy (Melbourne) and the Stodart Trophy (Adelaide). John and Josephine Quarisa have set up a very successful family business using grapes from various parts of NSW and SA, made in leased space. Production has risen in leaps and bounds, doubtless sustained by the exceptional value for money provided by the wines. Exports include the UK, Canada, Denmark, Sweden, Malaysia, Indonesia, Hong Kong and NZ.”
