This is so pretty! The 2021 Nebbiolo from Beechworth leads with rose petals and dried flowers, asphalt and ozone, dried rosemary and a hint of tobacco, graphite and black tea, black cherry and brine. On the palate, the wine is sensational; it offers us everything from the bouquet but framed in fine, willowy tannins that grip and are chalky across the palate.

If it had a sound, it would be the scratching sound of ice skates on ice. It’s firm, precise, tight, floral, mineral and almost febrile and ethereal. This is an exciting wine here. It’s ashy, almost. Super. 14% alcohol, sealed under Diam and wax.

– Erin Larkin (February, 2024) The Wine Advocate

Red Delicious apple. Earl Grey tea. Purple wine gums. An ethereal wine with intrigue and intent. Aromatic fruit on the front palate; the tannins elevate and drive the wine. A nebbiolo with incredible focus and finesse. Drinking well now but will reward cellaring.

About Sentio Wines

Sentiō Wines are first and foremost an expression of place. Sourcing quality grapes from growers across Victoria, Sentiō Wines invite you to understand the varietal through the lens of where it was grown, and the conditions it experienced during the vintage it was harvested in. Each wine tells a story. Let us take you on a journey.

Born and raised in Beechworth, Victoria, Chris developed a curiosity for wine making in his teens. His interest was nurtured by Barry Morey at Sorrenberg while he worked with him on vintages before going on to complete a double degree in Viticultural Science and Wine Science at Latrobe University in Melbourne. His early passion for Chardonnay stayed with him as he went on to complete seven vintages on the Mornington Peninsula (with Kooyong Estate, Portsea Estate and Paringa Estate) and five in Burgundy.

“My philosophy for Sentiō is a work in progress. Making wines that represent where they’re from is the fundamental point. I always loved seeing wines that give a story of the vineyard and the region.”

Principal Wines

We are wine lovers with no agenda, except to work with people who grow grapes, and to put their wines into the hands of people we respect.

We bring many years’ collective experience working in restaurants and winemaking to Principal Wine and think we have a pretty good idea of how a great glass of wine tastes.

Things change all the time in the world of wine, but our core values always remain the same - to work with people who make their wine in the vineyard, to have fine wine to sell to places we’d like to drink ourselves, and to provide excellent service.
