The colour is light with a green tinge, the aromatics display classic Great Southern riesling characters with apple blossom and lime tones being the more dominant. The palate shows a dry styled riesling with subtle mineral undertones and a tight acid-driven crisp finish.
The lees work shows adds a softly textured mouthfeel ensuring this wine is well suited to foods such as seafoods. It is anticipated in time this wine will evolve to display a stone-line minerality and poached citrus richness whilst retaining its linear acidity.
2021 delivered strong growing conditions in the Great Southern, with winter and spring being reasonably dry and summer holding slightly cooler temperatures which allowed for flavours to develop while retaining natural acidity.
The parcels of free run juice underwent a long and slow cold fermentation in stainless steel immediately after pressing to preserve the clean and pristine floral and citrus fruit characters. Gentle lees stirring was carried out to add subtle texture before preparation for bottling, which occurred in June 2021.
