Very light yellow-straw colour. The aromas are reserved, shy and savoury, with straw, hay, blond tobacco and dried herb nuances. It opens with a touch of apparent sweetness then finishes clean and dry, more savoury but still quite intense, with moderated varietal character but excellent vinosity. Great balance and harmony. Rich fruit. A very well-made wine. A benchmark.

100% estate-grown, single-vineyard, certified-biodynamic Sauvignon Blanc from a mix of grey gravelly loam over gravel and red loam over old riverbed.

Our biodynamic Stefano Lubiana Sauvignon Blanc is anything but ordinary. It displays expressive aromatics, a delicate aroma (unusual for such a commonly pungent variety) and an acidic zing and liveliness on the palate. It’s a wine of subtlety and elegance, traits not normally associated with this variety. It displays more texture than most due to our low crop levels and extended time on lees in our winery. Mix of 50% stainless steel and 50% large format Austrian oak fermentation. – Steve & Monique Lubiana

Tasmania’s first and only biodynamic vineyard

We are Tasmania’s first and only certified biodynamic vineyard, and have been cultivating our vines using biodynamic methods since 2010. This means that our wines are free of all synthetic treatments, additives and pesticides. Instead we travel the alternative path, stepping back in time and using cosmic rhythms to ensure soil regenereation as well as effective vine care through all phases of the year’s seasonal cycles.

These methods enhance our attention to detail in the vineyard and winery, as we’re more alert to the signals of Mother Nature and her messengers. Every season, we’re becoming more attuned to the synergies between our varied soil types, their organisms, the local flora and fauna, and of course our vines.

While we have a strong focus on sparkling wines as well as Pinot Noir and Chardonnay, we love experimenting and exploring. Don’t be surprised if you visit the cellar door to find a Blaufränkisch or Malvasia (or maybe a nip of grappa) tucked away behind the tasting bench.
