Offering immediate drinking pleasure without sacrificing the complexity and nuance that makes this grape so compelling. A wine brimming with seductive fruit, alluring aromas and supple tannins. The consummate overachiever.

MATT DEES’ WINEMAKER NOTES:
Completely seductive wine. Nose of blackberries and rosemary. Succulent and sweet red fruit. Savory notes and mouth coating tannins round out this harmonious and complete pinot noir.

89 POINTS “The 2017 Pinot Noir is another very pretty wine in the lineup. Sweet red/purplish berry fruit, lavender, rose petal, mint and sweet spice all run through this super-expressive Pinot. Think of the Paring Pinot as the Bourgogne of The Hilt. All the signatures are there, but in miniature.”
Antonio Galloni Vinous September 2019

91 POINTS “Deeply colored, the 2017 Pinot Noir tastes like a mini version of The Hilt Estate Pinot Noir. Ripe black raspberries, cherries, toasted spice, and scorched earth nuances all flow to a medium-bodied, concentrated Pinot Noir that drinks well today, yet has the depth and tannins to evolve for at least 5-6 years.”

Matt Dees | Winemaker

There are some people who are educated toward certain positions in life and others who are born to assume them—and Matt Dees is what you’d call a natural winemaker.

Armed with a degree in Soil Science from the University of Vermont and vintages at Staglin in Napa, California and Craggy Range in Hawkes Bay, New Zealand, Matt has an intrinsic feel for wine, from dirt to glass. Curious and experimental by nature, Matt’s approach to winemaking is grounded in the vineyard first and foremost: attuned to the vines, the weather, the soil, Matt seems almost to be a part of the vineyard itself.

Matt comes to wine with an untethered philosophy, a mindset embodied in The Paring. At the core of these wines one finds a wide-ranging exploration of style, vineyards and blending. When he’s not working with The Paring, Matt can be found making the wines for its big sister wineries- Jonata and The Hilt.
