Badet Clement Pontificis Chardonnay Viognier
60% Chardonnay 40% Viognier.
This wine has a nice golden colour with green tints. It offers praline and buttery notes, crys- tallized lemon and orange peel aromas in a very long and round palate. First nose is very aromatic, thanks to the Viognier which brings dried apricot, banana and pear notes. Then, come the subtle floral notes (white flowers, acacia) from the Chardonnay with citrus hints, pineapple and a slight touch of oak. The round attack on the palate is followed by a long persistent fresh finish with fruity notes.
Both grapes are sourced in the South of the Languedoc-Roussillon from an area between Beziers and Carcassonne. Dry, rather cool climate in summer. Viognier grapes are grown on limestone soils with pebbles, Chardonnay grapes are grown on stony limestone soils.
Hand harvested, both grape varieties are gently pressed and vinified independently. The fermentation is made in stainless steel vats at low temperature to keep as much fruit as possible. Aged on the lies till the end of winter before being racked in vats. We then blend the two wines.

Badet Clement Pontificis GSM 2019
Grenache (50%), Syrah (30%) and Mourvedre (20%).
This wine has a very deep purple color with blackcurrant and red fruits aromas, hints of flowers and spices. The dark fruit flavors are enhaced by satin-smooth tannins. Produced in the Languedoc-Roussillon, between sea and mountain, from the three local grape varieties.
Grenache comes from Tautavel and Puichéric, south of the minervois area. Syrah comes from Minervois and the Hérault plain, same winemaking as grenache. Mourvèdre comes from Gruissan, on schist soils of the Mediterranean coast. Hot and sunny climate. 30 year old vines.
Grenache is harvested by hand, long macera- tion and very traditional winemaking. Malo- lactic fermentation in tanks. 6 month aging in barrels. Same winemking for Syrah. 80% of Mourvèdre has long maceration and carbonic maceration for 20%. Long aging in tank.
