Vinification
Fruit is selectively hand-picked from each vineyard and crushed, destemmed and chilled to a membrane press. Free run and pressings juices are separated, and only the free run component is used for The Lost Watch Riesling. Juice is carefully racked away from solids prior to a cool tank ferment before being blended, stabilised and filtered for bottling.
