Twiggy Daisy Bush (Olearia ramulosa) is an evergreen shrub with small brilliant white flowers that are commonly seen in bridal bouquets and adorning the gardens throughout the WOODSTOCK Estate. WOODSTOCK ‘Twiggy’ Blanc de Blancs Sparkling was created from Chardonnay with love and celebration in mind. A light and elegant wine that is perfect for a party or for any occasion.

Chardonnay grapes were night harvested before fully ripened to capture the crisp natural acids.
The clear juice was cool fermented to dryness and aged before the secondary “Charmat” method of fermentation was triggered. This secondary fermentation created the fine bead of bubbles and some “bready” complexity.

Non-Vintage (NV) is a blend of young and older to capture balanced crispness and flavour development.

Similar to the flower, ‘Twiggy’ Blanc de Blancs is elegant and graceful. This sparkling wine has crisp green apple with a touch of toast on the bouquet, the palate is fine and refreshing with persistent bubbles and a lingering finish. While this wine will grow in complexity in a cool cellar for a few years, it is best enjoyed now.

he majority of our wines are sourced from WOODSTOCK Estate, which lies between McLaren Flat and Blewitt Springs, east of the town of McLaren Vale. Winemaker Scott Collett’s close proximity and deep understanding of these vineyards over many years maintains strict quality benchmarks of maximum flavour and intensity for which the WOODSTOCK Estate is known.

Although not yet certified organic, our vines are treated with minimal impact sprays and no pesticides. We tend our vine canopies by hand, and if required the vines are leaf plucked or crop thinned to ensure even ripening and good concentration of berry flavours.
