Woodstock has a proud tradition of after-dinner wines dating back to the 1950’s when Doug Collett started his winemaking career. His son Scott Collett keeps the fine old “Ports” maturing in Doug’s original barrels and also occasionally makes single vintage fortified styles, such as this.

Winemaking
Low yielding, very ripe and partially shrivelled sweet Cabernet Sauvignon grapes were harvested late in the 2016 vintage. After crushing and being fermented on their skins, pure grape spirit was added to “fortify” the alco-hol concentration to 18.5%. The fortified wine was then stored in very old oak barrels before bottling.

The Wine
Rich ripe black cherries, fruit pastilles with underlying spices of nutmeg, cinnamon and hints of mocha. These fruit and savoury characters follow on the palate with additional complexity and concentration of flavour. The astringency of fruit tannin and acid balances the sweetness leaving a warm-ing long aftertaste and an empty glass looking for a refill. Cellaring will help soften the tannins and integrate the rich fruit characters to develop and evolve into a smooth digestive style, to be enjoyed in the decades to come.

The WOODSTOCK wine portfolio includes a range of sparkling wines, fresh aromatic whites, opulent yet finely structured reds and finally, an eclectic selection of after-dinner wines.

he majority of our wines are sourced from WOODSTOCK Estate, which lies between McLaren Flat and Blewitt Springs, east of the town of McLaren Vale. Winemaker Scott Collett’s close proximity and deep understanding of these vineyards over many years maintains strict quality benchmarks of maximum flavour and intensity for which the WOODSTOCK Estate is known.

Although not yet certified organic, our vines are treated with minimal impact sprays and no pesticides. We tend our vine canopies by hand, and if required the vines are leaf plucked or crop thinned to ensure even ripening and good concentration of berry flavours.
