SHORT SHEEP was established in 2001 with the aim of producing premium wines driven by varietal and vintage character. The winery takes its name from the rare breed Babydoll Southdown sheep that grazed amongst and under the vines as part of the integrated sustainable practices in the vineyard and the winery.

All wines are from handpicked fruit sourced from low yielding vines with wine making in small batches. Releases are typically limited to 150-200 cases and Reserve releases under 100 cases. Vintage production is only 1500-1800 cases in total. Since 2010 all wines have been produced in our own Micro-Winery facility and sold exclusively direct to customer.

Red wines are crafted using traditional approaches such as open fermentation, hand plunging, basket pressing with all wine barrel aged in new and second use French, American and occasionally Hungarian or other European oak.White and rosé wines are cool and slow fermented in stainless steel to preserve flavour and aromatic character. In addition minimal preservative additives and processing/fining agents are used during wine making.
