The 2024 Carousal Chenin Blanc opens with vibrant notes of lime and fragrant orange blossom complemented by a subtle mineral edge, well-defined structure and crisp acidity.

The Chenin Blanc is sourced from the Mac Vineyard in Wilyabrup. This vineyard lies just inland from the coast, with well drained, sandy and schisty soils. The vineyard’s climate is strongly influenced by its immediate vicinity to the Indian Ocean, leading to saline and savoury, crisp and fresh whites.

Fruit is directly pressed, chilled and left to settle for a few days, then racked off its solids. The juice warms to about 10-12 degrees and the fermentation process begins naturally, and lasts about 6-8 weeks. Post ferment the wine is chilled down and racked off solids again. It stays on fine lees until bottling, when it is gently pre-filtered.

Chenin Blanc is celebrated for its ability to capture the essence of its terroir, and this exceptional parcel from the southern Margaret River region is a prime example that showcases its maritime climate origin and offers a delicious and sophisticated wine equally at home with food or without.

A family-led project with his wife Megan, Patrick searches beyond the cool ranges of southern Victoria to celebrate Australia’s great and diverse wine regions, centred around vineyard exploration and the dynamic exchange between winemaker and farmer. At its core, Carousal is about honest farming, respecting each site’s nuances and unique rhythms, and crafting wines with an inherent drinkability – the hallmark of Patrick’s approach.
