New. Available now. Diam. Located in the northwest corner of the Grand Cru slope below Preuses, Bougros has a notable south-easterly exposure and the steepest gradient of all the Chablis Grand Cru vineyards. We like Jasper Morris’s evocative description of the Bougros style: “like being smothered in a great big woolly jumper—big, fat, soft and round”.

This speaks to the texture of the wines from here. Morris goes on to describe the top of the vineyard—the sector from which this wine hails—as displaying the classical minerality of Chablis. The wine ferments and ages in oak barrels with regular bâtonnage and is bottled after 18 months.

“Slightly paler colour and more of a green tint. The nose is more backward, white fruit, the minerals more in retirement. This explodes on the palate while retaining its essential core, now the minerals come out, pure white fruit, with the spice of Bougros. An excellent example. Drink from 2028-2037.” 93-95 points, Jasper Morris MW, Inside Burgundy

“Here is extra aromatic breadth – maybe a little more generosity too – but with a nice vibration of energy. Like the Vaudesir, there’s extra depth and concentration but with an approachability to the flavours – this has fine texture and super depth of flavour.” Bill Nanson, Burgundy Report

“Exuberant on the nose with jackfruit, mango and crushed quartz, the palate further layers on the complexity with clementines and anise. Spritely acidity suavely guides the succulent palate into a finessed, long finish.” 94 points, Christy Canterbury, Tim Atkin Burgundy Report

THE DOMAIN, A FAMILY BUSINESS

Fourth generation from a family of vine-growers, Bernard Defaix started with 2 ha in 1959. From this period, a method to protect the vineyard against spring frost was discovered. Thanks to this, the vine-growers could be sure to have a minimum of harvest every year and so they began to develop stable trade markets.

The two sons of Bernard have been managing the domain since twenty years or so.

Sylvain is in charge of the vinification, the ageing, the bottling and the preparation of orders.
Didier takes care of the vineyard and the general management of the domain.
Helene, Didier’s wife, looks after the administrative and the commercial part.

So, from the vine to the final customer, the family looks after all the operations!

Fine Wine Cellars

On the one hand, our role as a merchant of all things wine & spirits could not be simpler. We aim to source the most delicious, the most authentic, and the highest quality products possible from Australia and around the world in order to offer them to our clients. We live or die by how well we perform this task. Of course things are rarely as simple or as easy as they seem. Hunting for wines & spirits is no different. Apart from the months spent travelling, countless days and evenings spent tasting and the outrageous wine expenditure in the name of ‘research’, sourcing quality wine and spirits requires expertise and experience. Understanding the potential of a producer and their products is much more than just a slurp and a spit.
