2 x bottles Yes said the Seal Pinot Noir
Hand-picked from the pride of our Pinot Noir vineyards, Block 9.
A vibrant yet inherently graceful pinot noir displaying cherry, spice and red berry. Depth of aroma and flavour is attributed to optimum harvest conditions and superb varietal qualities for which Clone 115 is renowned. Fermentation embraced wild yeast, 20% new oak complimented by tiers of fermentation in two, three and four year aged oak barrels over ten months. Layers of vibrant fruit, enchanting fragrance and soft textural tannins.

Estate grown. Hand picked. Rich, dark fruit was hand picked, foot stomped and 25% whole bunch fermented. Intense palate and structure, lovely balance and stunning length with fine tannins shining through. Vivid notes of black cherry pirouette across a stage of oriental spice, leather and smoke

2 x bottles Yes said the Seal Shiraz
Crafted from premium cool climate Bellarine fruit, this wine is bold, fleshy and full flavoured. Pronounced depth and complexity have been achieved via whole berry fermentation, moderate ferment temperatures, fine grained French oak and patience. Delight in the lifted aromatics, deliciously haunting tannins and balanced acidity. Enjoy now or cellar over the next 4 to 7 years to relish the results of evolution.

Jack Rabbit Vineyard Winemaker, Nyall Condon, became one of ten finalists in the prestigious Wine Society 'Young Winemaker of the Year' Awards 2012.  Nyall’s approach to winemaking is very much about minimal intervention and retaining the natural characters of each varietal – the fruit is the hero. Creative and thoughtful use of oak is another aspect of Nyall’s winemaking mantra – each year different - to best suit the ‘temperament’ and requirements of the varietal and the varying nature of each vintage.
