Organically farmed Gin Gin clone Chardonnay from a unique vineyard in Margaret River. The vineyard straddles the Dunsborough fault, which runs North-South along the length of the Cape.
On the Western side of the fault is the Leeuwin block, consisting of iron rich gravels over clay and limestone. On the Eastern side is the Perth basin, consisting sandy gravels over silts and sandstone.
The Chardonnay was machine picked and pressed to two barrels, one new French and one 5yr old barrel. The wine went through wild fermentation and was allowed to go through malolactic fermentation.
Fortnightly lees stirring took place during the 9 months in barrel, before the wine was hand bottled unfined and unfiltered.

In the winery we draw inspiration from our namesake, the Black Cockatoo by creating wines that are fun, vibrant and bold. Fruit is sourced from some of the most premium vineyards in the South West, with preference for growers who farm sustainably. In the winery the fruit is handled gently, typically using wild or indigenous yeasts with no fining or filtration.
