Hardly a fusillade-o-sucrose here, but rather a delicate sweetness. You should sneak in a bottle next time you go for dim-sum. I will! You feel flowers spring up on your palate. Lots of cantaloupe, and paradoxically it seems even more refreshing than the dry N.V. I mean, the fizz is delicious. Foie terrines yes we all know, but I rather envision this for unagi, for pan-Asian preps involving mango and other exotic fruits, for salads with lots of fruit and salt, maybe cantaloupe and lardons even slaw.

This is the same wine as the basic NV but disgorged earlier, 12/09, and it’s still immensely attractive and useful, and the finish coats the palate with wisteria and grape-hyacinth. This is the same cuvée as the Brut N.V. only with 32 g.l. About Champagne A. Margaine Wines

4 generations have succeeded and built the history of our House: Gaston , André , Bernard , Arnaud . But it would be narrow to forget the women who contributed to it: Adèle , Blanche , Marie-France , Karine . Because it is indeed a family adventure.

Since 1910 , everyone has been involved in building Champagne A. Margaine. Know-how has been passed on, but it is above all the passion of each other that is the common thread in the evolution of the House. The 5th generation is already on the path of knowledge and learning and will bring its added value when the time comes…

Villers-Marmery has the particularity of having a grape variety composed mainly of Chardonnay (98%). An island of Chardonnay in the Montagne de Reims, where Pinot usually dominates… Its South/South East exposure and its generously deep soil make this terroir an exception which allows Chardonnay to express itself differently…

We have abandoned the use of herbicides on 90% of our vineyard. Soil work and grassing have made a comeback. An adapted protection of our vineyard, not to say reasoned, is applied. The use of synthetic plant protection products is sometimes essential, but the basis of our protection remains copper and sulphur.

This choice, which we call “pragmatic”, we assume. We have a range of protections and these should be used sparingly . The main thing is that the raw material is beautiful and of good quality while respecting the environment. We want all the richness of our terroir to be expressed in our wines.
