Thomas Kies explains the slightly ghoulish name he has chosen for his business thus: ‘Don’t put it off, don’t procrastinate, don’t leave it until it’s too late. That’s why [I] created the label after spending years working in the wine industry, with time spent at wineries in Tasmania, Victoria and overseas, and later as a wine distributor in Melbourne.’ He works with growers in the Adelaide Hills and Clare Valley to select small parcels of grapes to be made with small batch techniques, hopefully showcasing the quality and purity of their fruit.
