The 2023 Pinku is a fresh and vibrant rosé made from Shiraz grown on the Yungarra vineyard in Yallingup. The fruit spends a short time on skins before being pressed to tank and barrel for fermentation.

Jo stirs the wine quite vigorously to ensure the fresh-berry fruit flavours are supplemented with weight and texture, and the wine undergoes full malolactic conversion. The wine is bottled without fining or filtration, and with just a small amount of sulphur.

A fresh and vibrant rosé made from Shiraz sourced from the Yungarra vineyard in Yallingup. The fruit is left for a short time on skins before being pressed to tank for a natural ferment. The wine receives lots of battonage which contributes weight and texture.

Full malo follows, and the wine is then racked and settled before bottling. No additives, fining or filtration. Only minimal sulphur is used at bottling.

About Dormilona

Josephine Perry is one of the most exciting emerging producers in Margaret River. Her Dormilona label is setting a new tone for the region.

A self-confessed ‘lazy-bones’ winemaker, Jo is low-intervention in the winery, instead focusing her energies on the quality of fruit that she brings in the winery.

She uses only organically and biodynamically farmed fruit from high-quality vineyards across Margaret River and is bringing an alt-styling to the way she produces the hero varieties of this famous region.

These are Margaret River wines with flair and originality. From vineyard to glass, Jo handcrafts each wine with love and tender hands. An authentic producer who’s rightfully gaining plenty of attention.

Fine Wine Cellars

On the one hand, our role as a merchant of all things wine & spirits could not be simpler. We aim to source the most delicious, the most authentic, and the highest quality products possible from Australia and around the world in order to offer them to our clients. We live or die by how well we perform this task. Of course things are rarely as simple or as easy as they seem. Hunting for wines & spirits is no different. Apart from the months spent travelling, countless days and evenings spent tasting and the outrageous wine expenditure in the name of ‘research’, sourcing quality wine and spirits requires expertise and experience. Understanding the potential of a producer and their products is much more than just a slurp and a spit.
