The Coldfire is an alternative take on Sauvignon Blanc, breaking from tradition to showcase a modern, innovative style. It strikes a balance, steering clear of extremes while offering intrigue.

VINTAGE 2023 – an excellent white wine vintage, typified by good yields and a dry, mild ripening period resulting in flavoursome, aromatic wines.

VARIETAL 100% Sauvignon Blanc

APPEARANCE Golden straw with pale green tints.

AROMA Intriguing aromas of tamarillo, mandarin, nashi pear and green olive, leading into complexing notes of chamomile, fennel, vanilla bean, grilled nuts and olive brine.

PALATE Textured and complex, a full-bodied white wine with mouthfeel and intrigue. Skin-contact during ferment heightens perfume whilst contributing phenolic crunch – peach kernel, fennel and green-olive pit, whilst new French oak adds woodsmoke, flint and exotic spice. Acid is soft yet textured, glossy, rich – think preserved lemon, mandarin, nectarine.

OAK DETAIL 50% of the blend was fermented on skins in seasoned open-top French oak puncheons before being basket-pressed direct to seasoned barriques for 5 months maturation. The remaining 50% of the blend was fermented and matured more conventionally in new French oak barriques.

CELLARING Ready for immediate drinking and will continue to drink well over the next 3-4 years.

FOOD PAIRING A wine to drink with food. Think seafood, poultry, pork, cheese. Deep-fried, crispy-skinned whole Pink Snapper with tamarind, lime chilli.

About Fermoy Estate

About Fermoy Estate is a premium winery nestled in the beautiful region of Wilyabrup, the ‘jewel in the crown’ of the famous wine making region of Margaret River, Western Australia. It was established in 1985 by John and Beryl Anderson.

Wilyabrup, with its rich, loamy, well-drained soils, perfect temperatures and quality old vines is a purveyor’s paradise. Little wonder it is considered the ‘golden triangle’ of Margaret River. The main varieties grown are Cabernet Sauvignon, Semillon, Sauvignon Blanc, Chardonnay, Merlot, and Shiraz.

The winery is located right next door to the vineyard, so the grapes can be processed without delay, ensuring their premium qualities are retained. The winery processes some 350 tonnes of grapes each year.

Fermoy is one of the original established vineyards of the Margaret River region, but continually seeks to incorporate new ideas and technology. This reflects Fermoy’s ongoing quest to bring you the very best wines, while ensuring that everything we do is environmentally sustainable.
