Description
Fruit
The fruit is from our small vineyard in the Margaret River region of Western Australia which is established on Treeton loam soils and receives cooling breezes from the Southern Ocean. This single estate vineyard in Rosa Glen has 1ha of 40 year old Sauvignon Blanc vines. Originally established dry farmed, although now irrigated, these vines produce only moderate yields. The 2017-2018 weather was very typical of Margaret River’s Mediterranean climate with a cool, wet winter and a mild spring and dry summer. The mild temperatures in January and February supported the development and retention of the flavour profiles in the whites. Just under 6 tonnes of quality Sauvignon Blanc was harvested on 7th March.
Winemaking / Oak Treatment
Approximately one third of the juice was fermented in new French oak barriques, the remainder was fermented in stainless steel. The portions were combined post-fermentation and lees stirred for 6 weeks in order to develop additional texture and complexity. The wine was lightly fined and filtered before bottling.
