This col fondo prosecco displays a glistening green hue. The natural effervescence lifts aromas of crispy fresh apples, meadow hay, guava, pears and creamy soft yeasty undertones. The flavours are much more intense than you’d expect with layers of honey, poached pears, walnuts, citrus and granny smith apples.

Our Col Fondo Prosecco is fermented in bottle on its original lees which you will see settled at the bottom of the bottle, creating flavours much more intense than you’d expect. We like standing the bottle in the fridge for 2 hours prior to pouring to settle the lees and recommend decanting or pouring the Prosecco whilst leaving the lees in the bottle for a crisp, fresh beverage. You can also try the prosecco with the lees stirred in to enjoy the soft, yeasty undertones to find your preferred style

A great accompaniment to oysters, seafood linguine or veal bone marrow tartare.

Gapsted Wines is an Australian family-owned winery, located near Myrtleford in Victoria’s High Country, established in 1996.

The winery is the outcome of six wine families seeing the potential of producing high quality cool climate wines from the Alpine and King Valleys.
