Tasting Notes, Viticulture & Winemaking – Shiraz
The best barrels were selected and blended to produce an elegant wine that has great length, balance and intensity. Both the aroma and palate have savoury characters with notes of dark plum fruits, liquorice and spice. Hand harvested in March 2017 in the cool of the morning. Ideal ripening conditions of even temperatures and cool nights allowed for excellent flavours to develop.Hand-picked, crushed, destemmed and fermented in open pots using a Rhone-strain yeast. Extended 15 day maceration. Matured for 20 months in premium French oak, this Shiraz will age gracefully over the next 10 years.
Tasting Notes, Viticulture & Winemaking – Cabernet Sauvignon
This medium bodied wine showcases characteristics of a Yarra Valley Cabernet Sauvignon. Aromas of cassis and blackberry are complimented by hints of toasted oak. The palate displays fine textural tannins and a well balanced finish Hand harvested in March 2017 in the cool of the morning. Ideal ripening conditions of even temperatures and cool nights allowed for excellent flavours to develop. Crushed and de-stemmed to open pots. Pumped-over twice daily. Followed by, post-ferment maceration to extract maximum tannin and mouthfeel. Matured in new (30%)and seasoned French hogsheads for 18 months.
