Our Riesling fruit was harvested in the early morning and gently pressed with very limited skin contact to preserve aroma and flavours. Fermentation was completed in stainless steel tanks. The Riesling is bottled young to retain crisp freshness.

The cool nights experienced in our region are due to the upwelling of cold currents offshore in the Great Southern Ocean bringing a lovely natural acidity to our Riesling. These cool nights contribute to the length of the growing period for Riesling in our vineyard and allows for gradual flavour development and elegance in the resulting wines.

Coonawarra experienced another strong vintage in 2023. With stable conditions, high-quality fruit and moderate to good yields. The temperature throughout January was slightly below average giving the grapes a long and cool ripening.

About Hollick Estate Wines

Established in 1983, Hollick is a boutique winery located on the famed terra rossa soils of Coonawarra, in the Limestone Coast Wine Zone of South Australia. Driven by quality and a hands-on approach, all Hollick Estates wines are crafted from premium estate-grown fruit.

Each wine bottled under the Hollick Estates label represents the history of the site where it was grown. Careful viticultural practises, overseen by Stuart Sharam, are married succinctly with minimalist winemaking techniques by Winemaker Trent Nankivell to ensure each bottle retains unique characters from the vineyard where it is sourced.
