The Pinot Noir for Vox Pop is 100% single vineyard, to be even more precise we have taken MV6 clone Pinot Noir from the highest South East facing aspect of the Amadio vineyard just outside the hamlet of Kersbrook. We harvest the fruit at the coolest part of the night and have the truck engine running as the last bin comes in, ready for the short drive and immediate transition into the winery. There’s a couple of winds and bumps along the road which help to give us that brilliant pink hue via skin contact. We don’t mind a bit of passive oxidation at this point and again at the press, as this takes the edge of any harsh phenolics and grip on the palate. The grapes are pressed straight to tank and cold settled for 3 days before being racked off gross lees pre-ferment. We’re looking to capture a sense of provenance at this stage, reflecting the vineyard and the vintage in its most complete form. We choose to leave the juice on light yeast lees through primary fermentation and the following months, reducing the need for sugar while developing mouthfeel and creamy natural complexity as the physiological elements integrate. At the same time the free run juice remains light on its feet, evolving into a fun, crisp wine with complexity and finesse. Secondary fermentation and a minimal dosage take place close to bottling in mid-June. The 2021 vintage has delivered us a vibrant pink hue. The nose and palate are at one, with rich strawberries and cream, mandarin and elegant herbal notes across the succulent zesty finish.
