Sourced from the cool climate Canowindra region in the Central Ranges from vineyards established in 1987. Picked in the morning to avoid warm temperature of the day, the fruit is quickly destemmed and crushed before moving to stainless steel tanks for fermentation. Gentle pump overs twice daily ensure colour and tannins are extracted without over working the fruit.
The wine undergoes Malolactic fermentation in tank and is kept on MLF lees for an extended period of time to soften the wine.
