This wine isn’t shy about its classic McLaren Vale pedigree. Dark black fruits, tobacco, black pepper and game abound in balance, never competing for dominance but existing in perfumed harmony with a careful combination of new and seasoned French barriques.
Wine Notes
Crushed straight to an open fermenter, this wine spends just over a week fermenting on skins, the ideal amount of time to extract the perfect amount of grippy yet fine tannin to complement the oak programme. Aged for 12 months in 30% new French barriques, and 70% seasoned oak, the delicate oak spice is subtle and complementary, never overpowering the fruit.
Vineyard
This steep southern facing site gives this vineyard a cooler and slower ripening aspect. Shallow black soils, single cordon and low cropping levels of 2 tonne per acre, ensures the vines are well balanced. The resulting fruit has intense varietal and complex fruit flavours.
Food Pairing
This classic example of McLaren Vale Shiraz calls for a classic pairing. A scotch fillet cooked over fire, and local vegetables roasted to perfection.
Cellaring
Drinking beautifully now but will reward the patient for the next 10-15+ years.
