Fermented with a non-Saccharomyces yeast, this wine has all the varietal freshness of apples and pears that you would expect in a Pinot Grigio, plus a little extra funk.
Fresh citrus like fruits and an appealing grassiness dominate the aroma, while yeast derived notes of dried herbs and hay linger in the background. Zesty acid freshens up the finish and invites you back for another glass.
Harvested in the cool of the morning, this fruit was immediately pressed off skins to avoid retaining any varietal pink colour. Fermented in stainless steel for maximum freshness, a non-Saccharomyces yeast species was used to start the fermentation process for the addition of complex secondary aromatic notes. Bottled very shortly after fermentation, vinified for good times.
The vineyard is an outstanding one, set on steep slopes, very rocky and north facing. From a tough a small vintage, but with fruit of very high quality.
