It is unlikely that any new oak will be used to make such wines. They are often associated with cooler climates, coastal sites higher latitudes, and/or vineyards at altitude. High-acidity grape varieties are often grown in warmer climates to achieve this refreshing style.

Certain soils such as limestone and chalk are often described as contributing to minerality and acidity in wines. However the relationship is yet to be fully understood.

There are also various ways in which winemakers can manage acidity, including acidification itself. However this is associated more with adding balance to warm climate wines made from grapes which gained high sugar levels.

About La Chablisienne Wines

Situated halfway between Paris and Beaune, Chablis is the golden gateway to the wines of Burgundy and its most northerly appellation. Chablis lies on both banks of the river Serein and includes nearly Twenty villages over rover 5500 Ha. and is on predominantly on ‘Kimmeridgian’ clay-limestone soil from Million year old sea beds, giving the terroir its minerality, finesse, and incomparable crystalline clarity.

Founded in 1923 under the leadership of Abbé Balitrand, a number of Chablis winemakers decided to join forces and together they created a cooperative winery in the heart of the Chablis vineyard in Burgundy – La Chablisienne was born and now with over 1200 Ha of wines, they represent almost 22% of Chablis production. Until the mid 1950s, the members of the cooperative delivered their production to La Chablisienne, which was then responsible for creating the assemblages and for sales, however, La Chablisienne aspired to create the best representation of Chablis from their selection of iconic vineyards and create a style of its own. So it was decided that the harvest would be delivered in the form of must with a clear direction of parcel management to provide total control over the winemaking processes and ensure the best wines possible indicative of their site and vintage.

The wines are 100% chardonnay, bright and fresh and the 1er Cru wines are amazing, and are very well priced compared to their competitor set.
