Husky coffee bean, barley, fresh wheat, dried roses, white pepper and faint white truffle aromatics are super complex and luxurious.
Ripe quince, meyer lemon, hints of apricot are ultra varietal and scream for food.

The power of the minerality is the dominant trait on the palate. Slight width at the front of the mouth is lost quickly to a deep diving and long line of mineral, which is so delicious with something fatty on the plate. The wine takes some time to reveal itself with the line and length being revealed with air.

The harvest and subsequent winemaking here were central to an effort to capture the very delicate fruit as densely and as powerfully as possible. The resulting wine has a powerful medium weight and a driven mineral that becomes more charged with air.

Sourced only from the Dash Farms site on the southern ridge of Leanganook. The site sits at a lofty 475 metres elevation and has a north-south row orientation. The soils are rich in decomposed granite lying over a granite bedrock and the I clone vines were planted in the 1990s.

An experimental approach to the vinification of this wine. The fruit was handpicked over four tries, very gently pressed and each batch fermented separately in a variety of oak vessels – new, old, big, small, French and Slavonian – without additions. Each parcel was racked in January of 2022, then blended and bottled. Some sulphur at bottling.

Pat takes fruits from across multiple well-farmed sites across Central Victoria. These are, by and large, vineyards and regions that fly under the radar. Well, Pat is making more and more people sit up and take notice.

He makes everything from classic, straight-down-the-line Shiraz and Chardonnay to more esoteric blends and naturally made experimental wines. These are joyful, friendly, charismatic wines from a young guy who shares those same characteristics.
