100% whole bunches of Shiraz grapes were tipped into a red fermenter, which was purged with CO2 and sealed, leaving the berries to ferment spontaneously.

After eight days, the partially fermented, fizzy grapes were pressed into old 500-litre puncheons to complete fermentation and malolactic conversion. The young wine was then racked from barrels to settle in tank and be prepared for bottling in June.
