Moscato Giallo, Pinot Blanc and Viognier from the Sparrow vineyard in Mt Torrens were hand-harvested on 24th March 2021. Destemmed whole berries were transferred into an old French barrique for semi-carbonic fermentation. All three grape varieties were co-fermented and left on skins for 5 months to extract flavour and structure. After pressing off the skins, the wine was matured in the same barrel for 4 months, untopped. The development of flor yeast created a savoury complexity and tamed the exuberant character of Moscato Giallo. No additives except 15 ppm SO2 before bottling. 280 bottles filled.

Charred peach, green pineapple, chamomile, and lychee mingle with fragrant acacia flowers and yeasty undertones. Pithy and mineral on the palate with salted grapefruit, fermented honey and a savoury textural finish. Powerful, yet delicate!
