About Montsable
The wines of Montsablé are inspired by the desire to craft elegant Burgundian varietals from Southern France. Working with growers in the cooler, lower vigour, sites of the St Chinian area of Languedoc, seeking out fruit which delivers pure flavours & great balance.
The Haute Vallée Limoux may be close to the wilds of the mighty Pyrénées but the cooler climate and limestone rich soils are the perfect host to classic noble varietals. With a tip of a hat to our Burgundian cousins, we craft fresh, elegant and complex wines.
In the winery, the fruit is handled carefully to build texture & mouthfeel, with oak only ever used to add just the subtlest of seasoning. The result is a Chardonnay with great palate weight, bright fruit & texture, while the Pinot Noir positively sings with lifted cherry & wild strawberry fruit.
