There is a complexity here too from the solids fermentation with flecks of gun flint and a note of freshly cured dough note just hovering in the background.
The palate is fresh and lively with juicy pear and pink grapefruit flavors, textural yeasty notes are all framed by a crisp line of acid that flows through the palate.
Hand-picked and whole bunch pressed with full solids old French oak puncheons for natural fermentation and subsequent maturation on lees for 3 months prior to bottling.
