An alchemy between the delicacy of an elderflower and the crispiness of a green pear weaved by notes of candied citrus zest. A flowing drink in which a soft density counteracts the vibrant acidity with a clean and tasty mineral finish.
The Riesling was fermented in large oak, 600L demi muid, in a refrigerated container right next to the vineyard. It is the ultimate expression of terroir. wo barrels were fermented with different German yeasts and the third was a wild ferment.
As with all Riesling, the ferment was predictably slow and steady, all the while expressing different aromas and flavours. To use a German analogy, it’s a bit like making sauerkraut; it just tastes better. The ferment was stopped in the cool room and then blended with the remaining barrels in tank. Just a really fun wine to make.
Our Riesling comes from a vineyard on the slopes of Mount Canobolas. We have only been producing a single variety Riesling for 2 years now, but we have made wine from these vines off and on for many years. It has a low water table and a high propensity to crop. With careful canopy and crop management it is an ideal site for producing aromatic Riesling of the highest pedigree.

A cool climate region can be defined as an area with heat degree days of 1600 or less. Cool nights in the growing season, large diurnal variation, long cool autumns and distinct seasons are also key factors in defining a cool climate region.
Orange is one of a handful of regions in Australia that fall into this category. Orange is unique among these regions due to the cool climate being the result of continental conditions rather than latitude.
