The fruit was separated into two ferments, with block five 100% whole bunch and block one whole berry. The whole bunch component gives the wine an aromatic lift whilst adding structure and a complex savoury element, whilst the whole berry portion adds juicy fruits and fills out the palate. Entirely sourced from blocks one and five of our Napoleone Vineyard in Coldstream, the original 35-year-old plantings of MV6 Pinot Noir. The fruit was separated into two ferments, with block five 100% whole bunch and block one whole berry. The whole bunch component gives the wine an aromatic lift whilst adding structure and a complex savoury element, whilst the whole berry portion adds juicy fruits and fills out the palate.

Gently pumped over twice daily to ensure a healthy ferment and subtle tannin extraction. The ferments were temperature-controlled to retain the wine’s beautiful aromatics. The wines are then pressed to a combination of new (30%) and seasoned French oak barriques. Once in oak, we left the wine on malo lees unsulphured for a few months, building depth and tannin harmony. The wine spends 12 months maturing in oak before bottling.

Winemaker Tim Shand selects fruit from over 150 acres of estate-grown vineyards on our 300 acre farm. We’ve planted several varieties over the past 27 years to best suit this site including Pinot Gris, Chardonnay, Gamay Noir, Pinot Noir, Shiraz, Merlot, Cabernet Franc and Cabernet Sauvignon. These varieties shine in different ways across these two distinctive expressions.
