The Adelaide Hills experienced another exceptional vintage on the back of one of the best ever in 2021. A wet winter and spring, followed by a dry and mild summer created a long ripening period which led to excellent flavour development whilst maintaining natural acidity.

The fruit was picked at optimal flavour ripeness in the cool of the morning when the acidity levels were at their highest. Following gentle pressing, the juice was rested for a few days and then racked with a small portion of lees maintained to add texture. Fermentation took place over 10 to 12 days and then the wine was racked off lees and kept cold until bottling.

Aromas of fresh grapefruit, passionfruit and cut grass.

Taste
Refreshing, with plenty of citrus, tropical fruits and melon characters on the palate, finishing with crisp, balanced acidity.
