Saison is a small batch handmade vermouth that celebrates the bounty of each season. We are proudly made in Melbourne by chef turned aperitif nerd Dave Verheul.

Our sixth Summer Flowers release, how time flies! This year’s release see’s this vermouth grow up a touch, I having turned down the sweetness and turned up the bitterness slightly.

We have used the same proven combo of 14 different flowers including elderflower, mangold, jasmine and chamomile – all farmed organically or picked in the wild. Infusions of yellow peach, nectarine and two kinds of wormwood are blended into our Moscato base wine farmed n nonth-eastern Victoria. Sweetened lightly and aged resting on yet more fresh flowers. – Saison

About Saison Vermouth Wines

Not already overworked enough with his full time role as chef and co-owner of Melbourne’s Embla, Dave Verheul started making vermouth in his spare time. Initially made in tiny batches with seasonal botanicals to match with certain dishes on his menus this project soon grew in popularity.

There are many local vermouths out there, but few take their role in gastronomy as seriously as Saison, realised with the idea that vermouth can be brighter and fresher, built on singular, seasonal, ingredient-led flavour profiles.

Already a modern cult classic and essential to any self-respecting almost-wine range, these vermouths are always a pleasure to drink for the short season that each release is around.

We are wine lovers with no agenda, except to work with people who grow grapes, and to put their wines into the hands of people we respect.

We bring many years’ collective experience working in restaurants and winemaking to Principal Wine and think we have a pretty good idea of how a great glass of wine tastes.

Things change all the time in the world of wine, but our core values always remain the same - to work with people who make their wine in the vineyard, to have fine wine to sell to places we’d like to drink ourselves, and to provide excellent service.
