The Lapis Lazuli vineyard, perched high on the Bendigo Terrace, is a site Sarah has had her eye on for years. It’s an exciting spot, facing northwest and with incredibly steep slopes reaching as high as 450 metres (most of Central Otago tops out at 300 metres). The tiny bunches and berries from these schist soils are incredibly concentrated. Oh, and it’s managed organically. Tick, tick, tick!

The handpicked fruit was pressed as whole bunches with no time on skins – the berries were too small – to stainless steel and puncheons for a long, slow, natural fermentation. Maturation was on lees for four months. The barrels bring power, while the tank holds brightness and aromatic lift.

Sarah Adamson, Winemaker at Scout Wines

Growing up in the Deep South of New Zealand, winemaking wasn’t even talked about when considering career options in my final years of school. Luckily, my parents had a great cellar and interest in wine which in turn sparked an enthusiasm

With a love for science and the outdoors I began to explore all options and found myself chatting to Invercargill’s only other Viticultural graduate. After a year of BSc and LLB, I left Canterbury University to pursue a career in winemaking. There was no turning back, and I have no regrets!

My favourite part of winemaking is blending. I love seeing all the parcels and batches come together to create what is going to be in the bottle.
