In 2008 we decided to make a Fortified Shiraz from the fruit at our Werribee vineyard because we loved to drink it. Over many vintages since then, we hand-pick and sort in the vineyard to ensure quality. Using a solera system, every few years the wine has been topped up with a fresh vintage of fortified Shiraz, maturing in old French barrels.

Colour: Deep, dark crimson with brick edge and brilliant clarity.

Aroma: Christmas cake, dark chocolate, caramel and sumptuous plum offer richness. More secondary characters of pepper and hints of oak cask are welcome savoury touches.

Palate: Medjool date, currant and cacao nib surge forth, wrapped in a velvet viscosity. Sweetness is apparent, but acidity and savoury depth mean that balance is always maintained. Primary fruit of plum and cassis still shine through, as well as budding secondary characters which promise an exciting evolution to come.

Food Pairing: Blue cheese, Dark chocolate, Sticky date pudding.

Viticulture
From our winery vineyard at Werribee. Made from Shiraz grapes over many vintages. The site has deep red volcanic soils with a warm, maritime climate. The Fruit was left to ripen on the vine to achieve high sugars and great flavour profiles before harvest and fermentation.

Winemaking
Starting back in 2008 it was decided to make a Fortified Shiraz. Over many vintages since then hand-picked and sorted in the vineyard to ensure quality. In the winery, fruit was 100% destemmed without crushing and the whole berries were transferred to a single open fermenter. The wine was fortified using aged grape spirit to arrest the fermentation and maintain natural sugars. Using a solera system every few years the wine was topped up with a fresh vintage of fortified Shiraz, maturing in old French Barrels. The average age is at least ten years, (this is the term Grand) prior to being racked, blended and bottled in Spring 2023.
